Peixinhos da Horta (Battered Green Beans)

Crisp beer-battered green bean bundles, fried golden and served with a squeeze of lemon — a much-loved Portuguese vegetable snack.

Ingredients
- 400 g green beans, trimmed
- 150 g wheat flour
- 1 tsp baking powder
- 2 dl beer, cold
- ½ tsp salt
- 1 l vegetable oil, for frying
- 1 lemon, cut into wedges
- 1 tsp salt, to serve

Method

Blanch the green beans — Blanch the green beans in boiling salted water for 3-4 minutes until just tender-crisp. Drain and pat completely dry.

Make the beer batter — Whisk the flour, baking powder and salt in a bowl. Gradually whisk in the cold beer until you have a smooth, thick batter.

Dip the bean bundles — Gather the beans into small bundles of 4-5, dip into the batter to coat evenly.

Fry until golden — Heat the vegetable oil to 180°C (350°F) and fry the bundles in batches for 3-4 minutes until golden and crisp. Drain on paper towels, sprinkle with salt, and serve hot with lemon wedges.
