Queijadas de Sintra (Cheese Tarts)

Small, sweet Portuguese cheese custards scented with cinnamon and lemon, with a delicately cracked golden top — a classic treat from Sintra.

Ingredients
- 400 g ricotta
- 200 g white sugar
- 3 egg
- 2 egg yolk
- 50 g wheat flour
- 1 tsp lemon zest
- 1 tsp ground cinnamon
- 1 tbsp butter, melted, for greasing
- 1 pinch salt

Method

Grease the muffin tin — Preheat the oven to 200°C. Brush a 12-cup muffin tin generously with the melted butter.

Whisk the ricotta and sugar — In a large bowl, whisk the ricotta with the sugar until smooth and well combined.

Whisk in eggs and flour — Beat in the eggs and egg yolks one at a time, then whisk in the flour, lemon zest, cinnamon and a pinch of salt until the batter is smooth and pourable.

Fill the muffin cups — Pour the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.

Bake until golden and set — Bake for 22-25 minutes until the tops are golden brown and slightly cracked but the centers still have a gentle wobble. Cool in the tin for 10 minutes before turning out.
