Quick-Seared Pork Tenderloin with Green Beans

Lean pork tenderloin medallions seared until golden and tossed with crisp green beans for a fast, high-protein dinner. Ready in under 20 minutes with over 40g of protein.

Ingredients
- 200 g pork tenderloin, sliced into medallions
- 150 g green beans, trimmed
- 1 tbsp olive oil
- 1 garlic, minced
- ½ tsp smoked paprika
- 1 tsp lemon juice
- salt to taste
- black pepper to taste
Method

Season the pork medallions — Pat the pork medallions dry and season both sides with smoked paprika, salt, and black pepper.

Sear the pork until golden — Heat the olive oil in a pan over high heat and sear the pork medallions for about 3 minutes per side until golden and cooked through.

Cook the green beans — Add the garlic and green beans to the pan, toss, and cook for 4 minutes until the beans are tender-crisp.

Finish and serve immediately — Drizzle with lemon juice, adjust seasoning, and serve immediately.
