Samgyeopsal Grilled Pork Belly

Thick-cut pork belly grilled tableside until crisp and smoky, wrapped in lettuce with garlic, chili, and gochujang for a classic Korean feast.

Ingredients
- 800 g pork belly, sliced thick
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
- 1 lettuce, leaves separated
- 4 garlic, sliced thin
- 2 fresh chilli, sliced
- 2 tbsp gochujang
- 1 tsp sesame oil
- ½ white cabbage, shredded

Method

Season the pork belly — Pat the pork belly slices dry and season lightly with salt and pepper. Arrange the sliced garlic and chili on a small plate for the table.

Grill the pork belly — Grill the pork belly slices over high heat for about 3-4 minutes per side, in batches, until crisp at the edges and cooked through.

Slice and toss with sesame — Slice the grilled pork into bite-sized pieces and toss with sesame oil and sesame seeds.

Serve with lettuce wraps — Serve with lettuce leaves, shredded cabbage, garlic, chili, and gochujang for wrapping at the table.
