Shrimp Tacos

Smoky spiced shrimp seared fast and piled into tortillas with a zingy lime slaw and creamy avocado. Fresh, fast, and bursting with flavor.

Ingredients
- 600 g shrimp, peeled
- 2 tbsp vegetable oil
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp chilli powder
- 2 garlic, minced
- 1 lime, juiced
- 8 wheat tortilla
- 200 g white cabbage, shredded
- 1 avocado, sliced
- 4 tbsp fresh cilantro, chopped
- 3 tbsp sour cream
- salt to taste

Method

Season the shrimp — Toss the shrimp with the smoked paprika, cumin, chili powder, garlic, half the lime juice, and salt.

Make the slaw — Toss the shredded cabbage with the remaining lime juice, sour cream, and a pinch of salt to make a quick slaw.

Cook the shrimp — Heat the oil in a skillet over high heat and cook the shrimp for 4 to 5 minutes until pink and just cooked through.

Assemble the tacos — Warm the tortillas and fill with slaw, shrimp, avocado, and cilantro. Serve straight away.
