Spanish Horchata de Chufa

A pale, nutty Valencian milk-drink blended fresh and chilled, lightly spiced with cinnamon and lemon zest. Silky and subtly sweet.

Ingredients
- 200 g almonds, soaked overnight
- 1 l water, cold
- 80 g white sugar
- 1 tsp ground cinnamon
- 1 tsp lemon zest
- 8 ice cube

Method

Blend the almonds — Drain the soaked almonds and blend with the cold water until as smooth and milky as possible.

Strain the milk — Strain through a fine cloth or nut-milk bag into a pitcher, pressing firmly to extract all the milky liquid.
- 3.
Sweeten and chill — Stir in the sugar, cinnamon, and lemon zest until fully dissolved, then chill well in the refrigerator.
- 4.
Serve over ice — Serve cold over ice cubes in short glasses, stirring before pouring as it settles.
