Juicy pork chops marinated in lemongrass, garlic, and fish sauce, then grilled until smoky and charred at the edges for a classic Vietnamese barbecue favourite.

Ingredients
- 8 pork chop
- 4 lemongrass, finely minced
- 5 garlic, minced
- 2 shallot, minced
- 3 tbsp fish sauce
- 2 tbsp honey
- 2 tbsp soy sauce
- 1 tsp Chinese five spice
- 1 tsp black pepper
- 1 tbsp vegetable oil
- 1 fresh chilli, minced
- 1 lime, cut into wedges
- 2 spring onion, sliced

Method

Make the lemongrass marinade — Whisk together the lemongrass, garlic, shallot, fish sauce, honey, soy sauce, five spice, black pepper, vegetable oil, and chilli to make the marinade.

Marinate the pork chops — Coat the pork chops thoroughly in the marinade and refrigerate for at least 1 hour, or overnight for best flavour.

Grill the pork chops — Grill the pork chops over medium-high heat for about 7-8 minutes per side, until charred at the edges and cooked through.

Rest and garnish — Rest the chops for a few minutes, then scatter with scallion and serve with lime wedges for squeezing.
