Thai Larb Lettuce Cups

Zesty ground turkey tossed with lime, fish sauce, chili, and fresh herbs, scooped up in crisp lettuce leaves. Bright, light, and carb-free.

Ingredients
- 500 g ground turkey
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 1 tsp chilli flakes
- 2 shallot, thinly sliced
- 3 tbsp fresh cilantro, chopped
- 2 tbsp fresh mint, chopped
- 2 spring onion, sliced
- 1 lettuce, leaves separated
- 1 tbsp vegetable oil

Method

Brown the turkey — Heat the oil in a pan over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes.

Season the turkey — Remove from the heat and let cool for 2 minutes. Stir in the lime juice, fish sauce, and chili flakes.

Fold in the herbs — Fold in the shallot, cilantro, mint, and most of the scallion, tossing to combine into a fragrant salad-like mixture.

Fill the lettuce cups — Spoon the warm larb into lettuce cups, scatter with remaining scallion, and serve immediately.
