Thai Peanut Tofu Stir-Fry

Golden pan-fried tofu and crisp vegetables tossed in a punchy peanut-lime sauce with a chilli kick. Fast, plant-based, protein-rich.

Ingredients
- 400 g tofu, cubed
- 2 tbsp vegetable oil
- 3 garlic, minced
- 15 g fresh ginger, grated
- 1 red bell pepper, sliced
- 200 g broccoli, in florets
- 3 spring onion, sliced
- 3 tbsp peanut butter
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 lime
- 1–2 fresh chilli, sliced
- 2 tbsp fresh cilantro, chopped

Method

Fry the tofu until golden — Press the tofu, cut into cubes, and fry in the vegetable oil for 8 minutes until golden on all sides. Remove and set aside.

Make the peanut sauce — Whisk the peanut butter, soy sauce, sesame oil, and juice of the lime with a splash of water into a smooth sauce.

Combine tofu and vegetables — Stir-fry the garlic, ginger, pepper, and broccoli over high heat for 5 minutes. Return the tofu, pour over the sauce, and toss for 1 minute to coat.

Garnish and serve — Serve scattered with spring onions, sliced chilli, and fresh cilantro.
