Italy's most beloved dessert: coffee-soaked layers folded around an airy mascarpone cream and dusted with bitter cocoa. Effortless, elegant, and made ahead.

Ingredients
- 4 egg, separated
- 100 g white sugar
- 500 g mascarpone
- 3 dl espresso, cooled
- 300 g ladyfingers
- 3 tbsp cocoa powder
- 1 pinch salt

Method

Whisk yolks and mascarpone — Whisk the egg yolks with the sugar until pale and thick, then fold in the mascarpone until smooth.

Fold in the egg whites — Whip the egg whites with a pinch of salt to stiff peaks, then gently fold them into the mascarpone cream in two additions.
- 3.
Layer the ladyfingers — Dip each ladyfinger briefly in the cooled coffee and arrange a layer in a dish. Spread over half the cream, then repeat for a second layer.
- 4.
Dust with cocoa and chill — Dust the top generously with cocoa powder, cover, and chill for at least 4 hours or overnight before serving.
