Turkish Bulgur Pilaf

Nutty bulgur wheat simmered with sweet peppers and tomato in a single pot. A comforting, wholesome Turkish side dish.

Ingredients
- 250 g bulgur
- 3 tbsp olive oil
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 2 tomato, diced
- 1 tbsp tomato paste
- 5 dl vegetable stock
- 1 tsp dried oregano
- salt to taste
- black pepper to taste
- 2 tbsp fresh parsley, chopped

Method

Sauté onion and pepper — Heat the olive oil in a pot over medium heat and sauté the onion and bell pepper for 6 minutes until softened.

Toast the bulgur — Stir in the tomato, tomato paste, and bulgur, and cook for 3 minutes, stirring, until the tomato paste darkens slightly.

Simmer the bulgur pilaf — Pour in the vegetable stock, add the oregano, salt, and pepper, and bring to a boil. Reduce the heat, cover, and simmer for 15 minutes until the bulgur is tender and the liquid absorbed.

Rest and fluff before serving — Remove from the heat, let it rest covered for 5 minutes, then fluff with a fork and stir through the parsley before serving.
