A tangy Vietnamese noodle soup with soft crab and egg curds in a tomato-rich broth, served over rice vermicelli with fresh herbs and lime.

    Mix the crab and eggs — In a bowl, beat the eggs and mix with the crab meat and minced dried shrimp until well combined.

    Cook the tomato base — Heat the vegetable oil in a pot over medium heat and sauté half the shallot until fragrant. Add the tomato wedges and tomato paste, cooking for 8 minutes until soft and richly coloured.

    Simmer the broth — Pour in the chicken stock and bring to a gentle boil. Season with fish sauce and sugar, then simmer for 10 minutes.
