Porto's mighty sandwich: layers of steak, ham and sausage under melted cheese, drenched in a spiced beer-tomato sauce and topped with a fried egg.

    • Worcestershire sauce1 tbsp

    Make the beer tomato sauce — Heat a little olive oil in a pan and sauté the onion, garlic and chili until soft. Add the canned tomatoes, tomato paste, worcestershire sauce and beer. Simmer for 15 minutes until slightly thickened, then blend until smooth.

    Reduce until glossy — Keep the sauce at a gentle simmer for a few more minutes until glossy and coating the back of a spoon. Season with salt and pepper, and keep warm.

    Sear the steaks and eggs — Season the steaks with salt and pepper and pan-fry over high heat for 2-3 minutes per side. Set aside. In the same pan, fry the eggs to your liking.

    Assemble and melt the cheese — Assemble each sandwich: bread, steak, ham, sausage, bread, then top with more ham and sausage and cover completely with gouda slices. Place under a hot broiler for 5-8 minutes until the cheese is melted and bubbling.

    Top with sauce and egg — Transfer each sandwich to a plate, pour the hot beer-tomato sauce generously over the top, and crown with a fried egg. Serve immediately with fries.
