    Cook and cool the riceย โ€” Rinse the white rice and cook it in boiling water until tender, about 12 minutes, then drain and let cool.

    • soy sauce1 tbsp

    Sear and flake the salmonย โ€” Season the salmon fillet with a little soy sauce and pan-sear over medium-high heat, about 3 minutes per side, until just cooked through. Let it cool, then flake into large pieces.

    • sesame oil1 tsp
    • rice vinegar1 tsp

    Whisk the sesame dressingย โ€” Whisk the remaining soy sauce, sesame oil and rice vinegar into a quick dressing.

    • sesame seeds1 tsp

    Assemble the rice boxย โ€” Pack the cooled rice into a lunch box, top with the salmon, edamame and cucumber, drizzle with the dressing and finish with sesame seeds. Seal and refrigerate until ready to eat.
