Prepare the smoking mixtureย โ Line a wok or heavy pot with foil, then scatter the green tea leaves, uncooked white rice and 150g white sugar over the foil to make the smoking mixture.

Arrange eggs on the rackย โ Set a wire rack over the mixture and arrange the hard-boiled, peeled eggs on the rack so smoke can reach them from all sides.

Smoke the eggsย โ Cover tightly and place the wok over medium-high heat until the mixture begins to smoke, then reduce to medium and smoke the eggs, covered, for 10 minutes.
